Some Zanzibari recipes tint kashata pink with food dye purely for eye-catching display on the market tray, a habit that has stuck even though it changes nothing about the flavor.

Grated coconut or crushed peanuts are cooked down with caramelized sugar and cardamom until the mixture sets into a firm, chewy candy, then cut into small squares. Stone Town market stalls and roadside sweet-sellers keep trays of it on hand as an inexpensive treat and popular souvenir.

Why it's made this way: Kashata pairs two of Zanzibar's most abundant crops, coconut and sugarcane, into a candy that reflects the island's identity as both a spice island and a coconut-growing archipelago.
