The chicken is grilled first and sauced second, the reverse order of most curries, so the meat keeps a smoky char-grilled edge even after simmering in coconut milk.

Chicken pieces are marinated in spices, charcoal-grilled until lightly charred, then finished by simmering in a rich coconut sauce brightened with lime, chili and turmeric. It's a special-occasion dish in Zanzibari households and a fixture on Stone Town restaurant menus.

Why it's made this way: The name literally describes chicken that's been "coated" in sauce after grilling, a technique that layers smoky char-grilled flavor with the coconut curry base found across the Swahili coast.
