Minced meat stir-fried with holy basil, chili, and garlic over extremely high heat, usually topped with a fried egg and served over rice. Vendors cook each order individually, right at the cart.

Why it's made this way: High-heat wok cooking ("wok hei") lets a single vendor serve a constant line of customers with almost no wait — speed is part of the dish's identity, not a shortcut.
