The oysters are harvested from mangrove roots in the nearby Oropouche Lagoon, not open water, since Trinidad's edible mangrove oysters grow clustered on submerged roots rather than a seabed.

Small mangrove oysters are shucked to order and served raw or lightly cooked in a spicy, seasoned broth of pepper sauce, ketchup, and lime, sipped from small plastic cups at highway-side stalls.

Why it's made this way: Debe's stalls along the SS Erin Road, backing onto the Oropouche Lagoon's oyster beds, made this stretch of Penal-Debe nationally famous as Trinidad's go-to oyster stop.
