Trinidadian folklore holds that anyone who eats cascadura is destined to return to Trinidad no matter where in the world they roam, a saying famous enough to have inspired local calypso and literature.

The small, armor-scaled cascadura fish, caught in the swamps and rice fields near Sangre Grande, is stewed whole with herbs, pepper, and ground provisions and sold by the bowl at nearby village markets.

Why it's made this way: The Nariva Swamp bordering Sangre Grande is one of the last strongholds of the wild cascadura, tying the fish and its legend specifically to this part of Trinidad.
