A ring-shaped fried dough, similar to a doughnut, stretched thin by hand before frying so the inside turns light and airy while the outside crisps up. Vendors fry them fresh to order and coat them in sugar the moment they come out of the oil, common at seaside towns like Sidi Bou Said and Carthage.
Why it's made this way: Because it's fried fresh per order rather than made ahead, bambalouni is sold almost exclusively by street and beachside vendors rather than in restaurants.
