Despite now being sold nationwide, including in Kairouan and Tunis's medina, kaak warka's documented origin traces back specifically to Sfax.

A delicate, doughnut-shaped ring pastry filled with almond paste and scented with orange blossom water, finished with a dusting of powdered sugar. Sfax bakeries turn these out for weddings, and they've since become a nationwide favorite with mint tea.

Why it's made this way: Sfax has long been known for its wedding-pastry tradition — kaak warka sits alongside baklawa and mlabbes as one of the city's celebratory sweets for feasts and marriages.
