In 2023 the Turkish Language Association changed the official spelling from 'çiğ börek' (raw börek) to 'çi börek'.

A thin crescent of dough folded over minced meat, onion and spices and deep-fried until blistered and golden, eaten hot by hand.

Why it's made this way: Crimean Tatar migrants brought it to Anatolia after the Crimean War and Eskişehir became its centre; the Eskişehir version is a registered geographical indication.
