The original 1930 sandwich had no cheese at all — provolone came later, and Cheez Whiz wasn't even on the market until 1952.
Thinly shaved ribeye is griddled with chopped onions and piled into a long Amoroso roll, then topped with melted provolone, American cheese, or Cheez Whiz. Walk-up windows in South Philadelphia grill it to order.
Why it's made this way: Hot dog vendors Pat and Harry Olivieri are credited with grilling chopped beef onto a roll for themselves in 1930 — a customer asked for one too, and the sandwich spread from their South Philly cart.
