New York Egg Cream

Despite the name, it contains neither egg nor cream — just milk, seltzer, and chocolate syrup, whipped into a thick foam at the counter.

The egg cream is a fizzy chocolate-milk drink built at the counter by mixing chocolate syrup and milk, then blasting in seltzer from a pressurized tap to raise a thick white foam on top. It was a fixture of Brooklyn and Lower East Side candy stores and soda fountains through the 20th century, mixed to order and drunk immediately before the foam settled.

Why it's made this way: It grew out of New York's old Jewish immigrant candy-store culture, where seltzer men delivered soda by the case and every corner shop had its own tap and syrup recipe.
