The sausage's name simply means 'Hungarian,' a nod to the Central European immigrants who introduced its paprika-heavy recipe to Montevideo's port grills.
A thick, paprika-spiced pork sausage is grilled over coals and served in crusty bread, often with mustard or chimichurri. It's a mainstay of the grill counters inside Montevideo's historic Mercado del Puerto.
