In Uruguay this pairing of quince paste and cheese is called 'Martín Fierro', after the gaucho hero of the epic poem, while Argentines know it as 'postre vigilante'.
Firm, dark-red quince paste is sliced and paired with a wedge of mild cheese, sold at markets, kiosks and bakeries across Uruguay. It's eaten by hand as a quick snack or dessert.
Why it's made this way: Quince paste came to the River Plate with Spanish settlers, and paired with cheese it became one of Uruguay's most common everyday desserts.
