Cooks in Bukhara say oshi sofi doesn't exist anywhere else in Uzbekistan — every component is fried separately in its own oil, then folded together at the very last minute so nothing turns mushy.

Oshi sofi is Bukhara's own feast-day plov, made by frying rice, meat, and vegetables separately before blending them — rather than stewing everything together from the start — for a lighter, more distinct-tasting result. It's traditionally cooked in huge batches for weddings and toy celebrations, though city eateries now serve it daily.

Why it's made this way: The separate-frying method was refined for feeding wedding crowds without losing the character of each ingredient, and it's one of the dishes Bukharis point to as proof their plov tradition stands apart from Tashkent's or Samarqand's.
