Bukhoro Patiri

Bukhara bakers often work sesame or nigella seeds and a milk or egg wash into the dough, giving patiri a shinier crust and richer flavor than the plainer loaves baked in most other Uzbek cities.

Patiri is Bukhara's everyday tandoor bread, pressed thinner and glossier than Samarqand's dense loaf, often brushed with milk and studded with sesame or nigella seeds before baking. Bakers pull it hot from clay ovens at the city's covered bazaars and sell it stacked by the dozen.

Why it's made this way: Bukhara's long run as a trading and craft hub gave its bakers reason to refine their own house style of non, distinct enough from neighboring cities that locals can often tell a Bukhara loaf apart on sight.
