It's really one long dumpling, not many — a thin sheet of dough is spread with filling, rolled up like a jelly roll, steamed whole, and only sliced into rounds right before it's served.

Honim (khanum) is a rolled dumpling: dough sheeted thin, spread with seasoned potato, onion, or minced meat, rolled into a log, and steamed until firm, then sliced crosswise and topped with sour cream or a garlicky sauce. Chorsu Bazaar stalls sell it warm, sliced right in front of you.

Why it's made this way: The rolled, sliced format makes it fast to portion and serve to bazaar crowds, and it's remained one of the market's standard steamed-dumpling options alongside manti.
