Norin (Naryn)

It's traditionally made a day ahead — the hand-cut noodles and horsemeat sausage are tossed together and left to rest overnight so the noodles fully soak up the meat's flavor before anyone eats it.

Norin (also called naryn) is a cold noodle dish of thin, hand-cut wheat noodles tossed with sliced horsemeat sausage (qazi) and a light broth-based dressing, sometimes topped with black pepper and onion. Vendors mound it up behind glass counters at Tashkent's Chorsu Bazaar, cut and served on request.

Why it's made this way: The dish reflects a nomadic, horsemeat-eating food tradition that persists strongest in Tashkent's old bazaar culture, where merchant families have sold it for generations.
