Both the noodles and the meat are cut into hair-thin strips so they tangle together, and norin is often served with a bowl of hot meat broth on the side.

Norin (also called naryn) is a cold noodle dish of thin, hand-cut wheat noodles tossed with sliced horsemeat sausage (qazi) and a light broth-based dressing, sometimes topped with black pepper and onion. Vendors mound it up behind glass counters at Tashkent's Chorsu Bazaar, cut and served on request.

Why it's made this way: The dish reflects a nomadic, horsemeat-eating food tradition that survives strongly in Tashkent's bazaar culture.
