Banana Fritters (Donat)

Vendors call these "donat" — Bislama for doughnut — even though they're really just ripe banana batter dropped straight into hot oil.

Ripe bananas are mashed into a simple batter, sometimes with a little flour and sugar, then deep-fried into golden fritters and sold hot from baskets at Port Vila's market and roadside stands, a favourite grab-and-go snack.

Why it's made this way: With bananas abundant and cheap across Efate, frying them into a sweet snack turned surplus fruit into an easy source of income for market vendors, especially popular with schoolchildren after class.
