Cà Phê Buôn Ma Thuột

The beans grown around this one city supply a large share of the robusta that makes Vietnam the world's biggest robusta coffee producer — most of it grown on the red volcanic soil surrounding Buôn Ma Thuột itself.

Dark-roasted robusta beans, often traditionally roasted with a touch of butter or sugar for a heavier, more caramelized flavor, are brewed drop by drop through a phin filter into a small glass, drunk black over ice or with condensed milk. Cafés throughout Buôn Ma Thuột serve it strong, thick, and unmistakably more intense than coffee found in Vietnam's coastal cities.

Why it's made this way: Đắk Lắk province's red basalt soil and elevation made it one of the areas the French chose for coffee cultivation in the early 20th century, and Buôn Ma Thuột has since grown into the acknowledged center of Vietnam's coffee industry, home to a dedicated coffee museum and recurring coffee festivals.
