Order one and you get two bowls: one of dressed noodles and one of broth, which is why locals call it 'two-bowl phở'.
Unlike soupy phở, the thin, firm dried rice noodles come dry, tossed with minced pork and fried shallots and dressed with dark soy and chili, next to a separate bowl of broth with beef or beef balls.
Why it's made this way: A Pleiku creation, recognised by the Asia Records Organization in 2012 for its culinary value; Gia Lai registered 'phở khô Gia Lai' as a protected trademark in 2022.
