Despite feeling like a timeless Vietnamese classic, the topped, grilled version is a fairly recent street-food invention, popularized in Đà Lạt within the last couple of decades.

A sheet of rice paper is laid straight over charcoal until it crisps, then quickly layered with a quail egg, minced pork or dried shrimp, scallion oil, and chili sauce before the edges scorch. Đà Lạt's night market stalls fold or roll it up to eat hot off the grill, earning it the nickname 'Vietnamese pizza.'

Why it's made this way: The modern topped version is particularly associated with Đà Lạt's night market culture, and its cheap, quick-to-grill format spread from there to Ho Chi Minh City and beyond within a matter of years.
