Đà Lạt is one of the only places in Vietnam cool enough to grow the globe artichoke at all — the plant needs a temperate climate the French found nowhere else in the colony.

Dried artichoke flowers, leaves, stems, and roots are simmered for hours into a dark, faintly sweet, earthy tea, sold hot from thermos flasks at Đà Lạt's market stalls or bottled to take home. It's often paired with the city's other local specialty, fresh strawberries, as a souvenir combo for visitors.

Why it's made this way: French colonists introduced the globe artichoke to Đà Lạt in the early 20th century because its high elevation offered one of the few climates in Vietnam suited to growing it, and the crop became so identified with the city that artichoke tea is now sold as a signature local product.
