Whole streets in Saigon exist almost entirely for this one category of food — plastic-stool 'ốc' alleys where dozens of shellfish dishes are the only thing on the menu, open well past midnight.

An array of snails, clams, and other shellfish are stir-fried to order in butter, tamarind, garlic, or chili-satay sauce, piled into metal trays, and eaten with a toothpick while picking the meat out of the shell. Saigon's dedicated snail-alley streets fill up after dark, packed with low plastic tables and stools well into the early morning.

Why it's made this way: The city's shellfish-alley culture grew out of Saigon's late-night street-eating habits, turning what was once a casual roadside snack into entire commercial strips built around nothing but ốc, especially concentrated in districts like District 4.
