The dipping sauce, not the pork, is usually what people remember — a thick, peanut-and-liver-enriched sauce unique to Huế that most other Vietnamese grilled-pork dishes don't use.

Seasoned minced pork is packed around lemongrass stalks or skewers and grilled over charcoal until smoky and charred, then wrapped in rice paper with herbs, green banana, and star fruit, and dipped into a thick sauce built from ground pork liver, peanuts, and soybean. Huế street stalls grill the skewers to order, filling the block with charcoal smoke.

Why it's made this way: The dish belongs to Huế's broader tradition of small, herb-wrapped grilled skewers and distinctive sauces set apart from the rest of Vietnam, part of the elaborate flavor-layering style the city is known for.
