Barramundi is recognised as the Northern Territory's official fish emblem — one of the few places anywhere that gives a single fish species that kind of formal, territory-level recognition.
Whole barramundi fillets are grilled or pan-fried skin-on until crisp, served simply with lemon and salad, or battered for a Territory take on fish and chips. Darwin's markets, pubs and riverside kiosks sell it as the default local fish, wild-caught from Top End rivers and estuaries.
Why it's made this way: Barramundi thrive in the tropical rivers, billabongs and coastal waters of the Top End, and both Aboriginal communities and the NT's commercial and recreational fishers have long treated it as the region's signature catch.
