The Northern Territory is home to the majority of Australia's saltwater crocodile farms, and their mild, pork-like tail meat turns up as burgers, skewers and jerky at markets across Darwin.
Farmed crocodile meat, mild and slightly chewy, is skewered, crumbed or ground into burger patties and sold from market stalls and novelty-menu diners across Darwin, including at Mindil Beach markets. It's usually pan-fried or grilled and served simply, sometimes alongside kangaroo and buffalo on the same stall's menu.
Why it's made this way: The Territory's saltwater crocodile farming industry grew out of 1970s conservation protections that ended uncontrolled wild hunting and shifted commercial harvesting onto farms, and the meat this industry produces has become a genuine local specialty sold to residents and tourists alike.
