Moonta, Kadina and Wallaroo host Kernewek Lowender every two years, billed as the world's largest Cornish festival, and the pasty is its centrepiece.

A thick pastry parcel of diced beef, potato, swede and onion, crimped along one edge into a half-moon shape. Bakeries in Moonta and its neighbouring Copper Coast towns, the area nicknamed 'Little Cornwall,' still turn them out daily alongside saffron cake.

Why it's made this way: Cornish miners arrived in large numbers to work South Australia's copper mines, at Burra from the 1840s and around Moonta and Kadina from the 1860s, and these towns kept baking the pasty as a point of Cornish identity long after the mines closed.
