Melbourne's Chinatown on Little Bourke Street dates to the 1850s gold rush and is considered the oldest continuously running Chinatown in the Southern Hemisphere, and the longest continuous Chinese settlement outside Asia.
Whole ducks and slabs of pork glaze and turn in shopfront windows along Little Bourke Street, then get hacked to order over steamed rice with a ladle of dark soy-and-star-anise gravy. Cantonese barbecue shops here have fed the neighbourhood's lunch crowd since the gold-rush era.
Why it's made this way: Chinese miners who arrived during Victoria's 1850s gold rush settled around Little Bourke Street, and the barbecue trade that fed that community has run continuously ever since, making it one of the oldest working Chinatowns anywhere.
