The Western Rock Lobster fishery is Australia's single most valuable wild-catch fishery, and in 2000 it became one of the first fisheries anywhere in the world to be certified sustainable under the Marine Stewardship Council standard.

Whole crayfish are split, brushed with garlic butter and grilled over coals or steamed, then eaten hot with crusty bread at seaside shacks and market stalls along the WA coast. Locals just call it 'cray' — a Christmas Day fixture as much as an everyday treat.

Why it's made this way: Panulirus cygnus, the western rock lobster, is found only off the Western Australian coast between Shark Bay and Cape Leeuwin, and its pot fishery of some 230 boats has anchored WA's seafood economy and local eating habits for generations.
