It's thickened almost entirely with barley rather than flour or cream — a grain that was cheap, storable through winter, and filling enough to carry the whole pot.

Pearl barley and dried beans are simmered slowly with smoked pork or bacon until the barley breaks down into a thick, porridge-like stew. Carinthian winter markets and mountain-village stalls ladle it out hot in cups for a warming street snack.

Why it's made this way: The dish is a classic Alpine farmhouse stretcher meal, built around grains and legumes that stored well through long winters when fresh food was scarce.
