Despite the name (Leber means liver), traditional Leberkäse usually contains no liver at all — it's a smooth, finely ground blend of beef, pork, and bacon baked in a loaf pan.
A thick slab is sliced off a large baked loaf, browned on a griddle, and tucked into a crusty bread roll (Semmel), sold hot from butcher counters, snack stands, and street kiosks throughout Austria, usually with mustard.
Why it's made this way: Because the loaf can be baked in advance and reheated to order, it became a fast, inexpensive way for butchers and stands to sell a hot meat sandwich without the wait of grilling individual cuts.
