Locals simply call it 'Grüner,' and sommeliers prize its faint white-pepper note — a spice-rack character almost no other white grape produces naturally.
Grüner Veltliner is a dry, mineral, peppery white wine grown on the terraced slopes above the Danube. It's typically drunk young and chilled, paired with Austrian classics like Wiener Schnitzel or a simple Heuriger platter of cheese and cold cuts.
Why it's made this way: The steep vineyards of the Wachau, Kamptal and Kremstal in Niederösterreich are the historic heartland of this grape, Austria's most widely planted and most internationally recognized wine.
