It's pressed from roasted, hulless pumpkin seeds and comes out so dark green it's nicknamed 'black gold' — a few drops turn any plain market snack into a Styrian one.

Specially bred hulless pumpkin seeds are roasted, then cold-pressed into a thick, nutty, deep-green oil. Styrian farmers-market stands sell it by the bottle, and food stalls drizzle it over everything from bread with cheese to grilled sausage as a finishing touch.

Why it's made this way: Styria's pumpkin-growing tradition and a locally bred seedless pumpkin variety made the oil a genuine regional specialty, now protected under EU geographical indication rules.
