The name Schilcher is protected under Austrian wine law: only rosé made from Blauer Wildbacher grown in Styria may carry it, and it is the house pour at Styria's seasonal Buschenschank farm taverns.

Schilcher is a bright pink-to-ruby rosé pressed from the indigenous Blauer Wildbacher grape, known for its steely acidity, red-berry tang and a faint natural spritz. It's typically served well-chilled as a refreshing aperitif or alongside Styrian pumpkin-seed-oil dishes.

Why it's made this way: Weststeiermark (Western Styria), nicknamed Schilcherland, is the only place this centuries-old grape is grown at scale, making the wine a point of fierce local pride.
