The dough is made with rye or buckwheat rather than white wheat flour, giving it a darker color and earthier flavor than most stuffed pasta.

Half-moon pasta pockets are filled with a mix of spinach and soft cheese, boiled, then finished with melted butter and a scatter of grated cheese or chives. They're a standard order at Tyrolean mountain-hut kitchens and Alpine market stalls, especially after a hike.

Why it's made this way: The rye-and-buckwheat dough reflects Tyrol's mountain grain economy, where wheat was historically scarcer and harder-growing crops filled the gap.
