Dukunu is made from fresh, milky corn blended whole into a batter, not dried cornmeal, giving it a texture closer to a soft pudding than a firm tamale.

Fresh corn is blended with coconut milk and sugar into a sweet batter, wrapped in corn husks, and boiled until set like a soft pudding. Belize City street vendors sell them tied in pairs from baskets.

Why it's made this way: Dukunu is a longstanding Creole street snack in Belize City, the commercial heart of Belize District, sold by generations of local vendors at markets and bus stops.
