Hudut is served with the mashed plantain still warm in the same bowl as the broth, meant to be torn off by hand and dipped rather than eaten with a spoon.

Fish is simmered in a spiced coconut milk broth and served alongside hudut, mashed boiled plantain and cassava pounded smooth. Garifuna cooks in Dangriga sell it from home kitchens and small eateries along the seafront.

Why it's made this way: Hudut is the signature dish of Belize's Garifuna people, whose cultural capital is Dangriga in Stann Creek, making the district the dish's true home.
