The name borrows 'byurek' from the Turkish börek, even though no pastry is involved — the roasted pepper itself is the wrapper.
Peppers are roasted and peeled, stuffed with a mix of sirene cheese and egg, dipped in egg and flour or breadcrumbs, and fried until golden. Plovdiv's mehanas and market grills serve them as a snack plate alongside bread.
Why it's made this way: Chushki byurek is eaten all over Bulgaria, and the Thracian plain around Plovdiv is one of the country's main pepper-growing areas, which keeps it a fixture of local tavern menus in late summer.
