It's coiled into a tight spiral specifically so it lies flat on the grill and cooks evenly all the way through in one go.

Pork and beef seasoned with cumin and black pepper are stuffed into natural casing and wound into a coil, then grilled until the outside crisps. It's a common sight sizzling on fair and market grills around Veliko Tarnovo.

Why it's made this way: The coiled shape is a practical fairground trick — one continuous sausage grills more evenly and is easier to portion than a row of separate links.
