Dishes like this were once left baking from dawn in brick ovens along the old trade routes between Constantinople and Vienna.

Pork, onions, peppers, and mushrooms are slow-cooked in an individual clay pot until the meat falls apart, then served bubbling straight from the oven. Veliko Tarnovo's old-town taverns, built into the hillside below the medieval fortress, are known for it.

Why it's made this way: Clay-pot cooking in this region goes back to Thracian times, and the technique was refined during the Ottoman era and kept alive by roadside inns along Bulgaria's old trade routes.
