This simple wok-fried noodle dish shows up again and again in roundups of Cambodia's best street food, its short 'silver needle' noodles named for their pale, tapered shape.

Short, fat silver-needle rice noodles are stir-fried hard and fast with garlic, bean sprouts, chives, and a choice of beef, chicken, or pork in a dark palm-sugar and soy sauce, then finished with a fried egg on top and chili sauce on the side. Night market woks around Siem Reap's Pub Street area turn out plate after plate to a steady line of stools.

Why it's made this way: The dish grew out of Cambodian-Chinese cooking traditions and became a fixture of Siem Reap's night markets and roadside carts, prized for being fast, cheap, and endlessly customizable with whatever protein is on hand.
