Digby's scallop fleet still drags for wild sea scallops the traditional way, and the town holds an annual Scallop Days festival built entirely around the harvest.
Fresh sea scallops are lightly battered and pan-fried, then piled into a toasted bun with tartar sauce and lettuce. Wharf-side fryers in the Digby, Nova Scotia area sell the roll as a summer specialty.
