Despite sounding like a soup dish, it's served completely dry — the name literally warns diners there's no broth, just noodles tossed in sesame paste.

Alkaline wheat noodles are parboiled, air-dried, then quickly reboiled to order and tossed with thick sesame paste, chili oil, pickled radish, and vinegar.

Why it's made this way: The double-cooking method let street vendors prep noodles in bulk and serve them quickly to Wuhan's rushing commuters.
