Re Gan Mian (Hot Dry Noodles) Noodle · Tossed, no broth Re Gan Mian (Hot Dry Noodles) Despite sounding like a soup dish, it's served completely dry — the name literally warns diners there's no broth, just noodles tossed in sesame paste. Alkaline wheat noodles are parboiled, air-dried, then quickly reboiled to order and tossed with thick sesame paste, chili oil, pickled radish, and vinegar. Doupi (Wuhan Layered Rice and Bean Skin) Breakfast · Pan-fried Doupi (Wuhan Layered Rice and Bean Skin) Mao Zedong ate doupi at Wuhan's Laotongcheng restaurant in 1958, and the shop has traded on that visit ever since. A thin skin made from mung bean and rice flour batter is pan-fried, then layered with glutinous rice, minced pork, mushroom, and bamboo shoots, pressed and pan-fried again. Mianwo (Rice and Soybean Fritter) Snack · Deep-fried Mianwo (Rice and Soybean Fritter) The ring shape, thick and crisp at the rim with a thin center, comes from a special ladle whose middle is raised, so the batter runs to the edges. A batter of rice and soybeans is ladled into a ring-shaped mold and deep-fried until it forms a golden, doughnut-like fritter with crisp edges and a softer center. 🍶 Breakfast Stall · Sweet Rice Wine Xiaogan Mijiu (Sweet Fermented Rice Wine) Despite the word 'wine', it is eaten with a spoon: the soft fermented rice grains stay in the bowl with their sweet liquid. Glutinous rice is steamed, mixed with a wine starter and left to ferment until sweet and soft. It is eaten straight or heated with small glutinous rice balls as a breakfast or late-night… 🫓 Clay Oven · Stuffed Flatbread Gong'an Guokui (Oven-Baked Stuffed Flatbread) It is baked by slapping the dough onto the inside wall of a cylindrical charcoal stove, the same way naan meets a tandoor.
