The soft, custard-textured cubes in the bowl are set duck blood — and they soak up the broth's flavor almost like tofu does.

A rich duck broth is ladled over glass vermicelli, cubes of duck blood, chopped duck gizzard or intestine, and scallions, finished with a spoon of chili oil. Nanjing sells it everywhere from folding-table stalls to storefront chains.

Why it's made this way: Nanjing's long tradition of salted and roasted duck left cooks with every part of the bird to use, and simmering the blood and offal into a soup base became a nothing-wasted way to build a separate street dish.
