The 'fen' is not noodles but cubes of homemade starch jelly, simmered in the soup with fried potato slices.

Dumplings are cooked most of the way, then finished in a mutton broth simmered with cubes of homemade starch jelly, wood-ear mushroom, day-lily buds, tomato, fried potato slices, spinach and cilantro.

Why it's made this way: It is one of Yinchuan's ten best-known snacks and is sold at dumpling shops across the city.
