A 'proper' fritula is judged by whether it fits in one bite — vendors who make them too big are considered to be cutting corners.
Fritule are bite-sized balls of yeasted dough, often studded with raisins and a splash of rakija or citrus zest, deep-fried until golden and dusted with powdered sugar. Sold warm in paper cones from market stalls and winter fairs along the Dalmatian coast.
