Peso Pizza

It earned its name from the price, not the topping — for decades a single slice cost just one Cuban peso, folded in half and eaten standing at the counter.

A thin, chewy dough is topped with a simple layer of tomato sauce and a sprinkle of cheese, baked fast in a small oven, and sold folded over like a taco through a walk-up window. Street stalls in Camagüey, Trinidad, and towns across central Cuba sell them cheap, hot, and fast.

Why it's made this way: With formal restaurants historically scarce and expensive outside tourist zones, peso pizza became central Cuba's everyday budget meal — a slice cheap enough that almost anyone could grab one between errands.
