Unlike a wrapped tamale, this one is never folded in a husk — the whole pot of corn dough and pork is spooned straight into bowls like a thick porridge.

Fresh grated corn is cooked down with pork, sofrito, and seasoning directly in a pot until it thickens into a soft, spoonable dough, rather than being wrapped in husks like a traditional tamale. It's a common home-style dish in the farming towns of central Cuba, where corn grows easily on the plains around Camagüey and Sancti Spíritus.

Why it's made this way: Central Cuba's inland corn-growing plains make tamal en cazuela more of an everyday farmhouse dish here than in the coastal cities, cooked loose in the pot rather than wrapped for a special occasion.
