Frita Cubana

Vendors called friteros sold these from small street carts called puestos de frita, piling shoestring-thin fried potatoes right on top of the burger instead of serving them on the side.

A thin patty of seasoned ground beef and pork, spiced with paprika and cumin, is grilled and tucked into a soft roll with sautéed onions and a heap of crispy shoestring potatoes on top. It was invented on Havana's streets in the 1930s and later carried to Miami by Cuban exiles.

Why it's made this way: The frita grew out of Havana's puestos de frita street-cart culture and had nearly disappeared on the island by the late 1960s, surviving mainly through the Cuban exile community that kept making it in Miami.
